Fish
IgE-mediated food allergy, mainly to parvalbumin.
Annexe II, entrée4: “Fish and products thereof”

The dominant fish allergen is parvalbumin, a small muscle protein that is stable to heat, drying, smoking and salting. That is why none of the traditional preservation methods of this region make a fish safe, and why the steam and aerosol from cooking fish can trigger symptoms in a sensitive person in the next room. Fish allergy is one of the more common causes of severe reactions in Nordic children.
Who gets it, and does it last
Fish allergy usually starts in early childhood and usually persists into adult life. Some people react to one species and tolerate others — parvalbumin content varies, and tuna and swordfish are the species most often tolerated — but that is established by clinical testing, not by trial at the table.
Where it hides
- Worcestershire sauce and Caesar dressing (anchovy)
- Fish sauce in South-East Asian cooking
- Surimi and crab sticks
- Some pizza toppings and tapenade
- Stock and bouillon powders
- Omega-3 supplements
Fish sits at the centre of the food culture here — Baltic herring, sprat, salmon, whitefish, and salted, smoked and marinated preparations everywhere. School and workplace canteens across the region serve fish on a fixed weekday, which makes fish allergy a scheduling problem for a family as well as a dietary one.
Cross-reactions
Cross-reactivity between fish species is high because parvalbumin is so conserved. There is no cross-reactivity with crustaceans or molluscs, which are a completely separate problem. Anisakis, a parasite of marine fish, causes its own allergy that can look like fish allergy but responds differently to freezing and cooking.
The labelling detail
Entry 4 carries two narrow exemptions, both for fish gelatine and isinglass in specific technical uses. A beer or wine fined with isinglass therefore need not declare fish, which is worth knowing rather than worrying about, since the residue is minimal by design.
Exempt from declaration under Annex II:
- Fish gelatine used as a carrier for vitamin or carotenoid preparations
- Fish gelatine or isinglass used as a fining agent in beer and wine
Precautionary wording — “may contain”, “made in a factory that also handles” — is a separate matter: it is voluntary, unstandardised and carries no threshold. How strictly to treat it is a clinical decision, not a reading of the label. The labelling explainer sets out the whole frame, including what happens in restaurants and bakeries where there is no pack at all.
Ce qui se lit mal
Fish oil supplements and fish allergy are not automatically incompatible, but a supplement is a food product and its label is the thing to read. And avoiding fish because of a shellfish allergy, or the reverse, is common and unnecessary.

Les sources inattendues de routine sont worcestershire sauce and caesar dressing (anchovy); fish sauce in south-east asian cooking; surimi and crab sticks; some pizza toppings and tapenade; stock and bouillon powders; omega-3 supplements.
Oui, 2 : Fish gelatine used as a carrier for vitamin or carotenoid preparations; Fish gelatine or isinglass used as a fining agent in beer and wine.
Cereals containing gluten
Coeliac disease (autoimmune), wheat allergy (IgE) and non-coeliac wheat sensitivity — three different conditions under one entry.
Crustaceans
IgE-mediated food allergy, mainly to tropomyosin.
Eggs
IgE-mediated food allergy.

Keep the log, spot the pattern
When a reaction is hard to pin down, a food and symptom log across weeks is worth more than any single meal you can remember. TempoLife keeps both in one place.
